Can I add my own deals manually (companies not in the directory)?

Yes — in the Pipeline view, tap the + button in the top right to add a company manually. Enter the company name, sector, county, and contact details. Manually added companies enter the pipeline at the "New Lead" stage and you can draft a follow-up with Fanel immediately. They are also scored by Fanel using the information you provide.
